LESSON 3-PROCEDURES FOR CLEANING A KITCHEN

REPEAT CLEAN

 KITCHEN ENGLISH

PRODUCTS USED TO CLEAN A KITCHEN –

   (Be sure all 16-oz spray bottle tops are working and carry 1 spare sprayer top.)

  1. Spic and Span disinfectant cleaner
  2. Tilex
  3. Simple Green
  4. Water

TOOLS USED TO CLEAN A KITCHEN

(Be sure all tools are clean and in working order.  Sufficient bristles remain on brushes and feathers in duster.   Be sure all sponges are clean. Over-used, smelly or grimy sponges need to be replaced.)

ACTIONS USED TO CLEAN A KITCHEN

  1. Wipe- Clean or dry (something) by rubbing its surface with a cloth, a piece of paper, or one’s hand in one move    
  2. Rub-Move one’s hand or a cloth repeatedly back and forth on the surface of (something) with firm pressure.  
  3. Scrub- Firmly pressing hand while rapidly moving it back and forth generally using a brush or non-abrasive scrubbing pad  
  4. Scour- Clean or brighten the surface of (something) firmly pressing hand while rapidly moving it back and forth generally using an abrasive tool or detergent. 

CLEANING INSTRUCTIONS FOR APPROPRIATE PRODUCT, TOOL AND ACTION TO USE WHEN CLEANING A SPECIFIC ITEM OR AREA

ITEMS NEEDED TO CLEAN

Apron

  1. Wipe between jobs with disinfectant cleaner and green microfiber cleaning cloth
  2. Put apron on as soon as you enter the home
  3. You will prepare your apron for cleaning a kitchen when you have completed long dusting
Green apron

Step Stool

  1. Always take into homes and use to reach any high area or item you cannot reach
  2.  Wipe between jobs with disinfectant cleaner and green microfiber cleaning cloth
  3.  FOR SAFETY REASONS NEVER STAND OR KNEEL ON ANY COUNTER – YOU CAN AND WILL BREAK THE COUNTER-TOP. OUR INSURANCE WILL ONLY PAY FOR ACCIDENTS AND THIS KIND OF BREAKAGE IS NOT AN ACCIDENT

Rugs and Mats

  1. Remove the mats and rugs before starting to clean the kitchen.
  2.  Vacuum or shake the rugs and/or hand wet wipe the hard surface mats 
  3. Place them on the side in a tidy pile or roll it up when possible to avoid a trip hazard.

Trash-               

  1. Whether it is located outside or it’s built in or in the pantry, every kitchen has a trash container. Look for it.
  2. Remove trash from kitchen trash container
  3. Wipe the outside and inside of container with disinfectant cleaner and a green microfiber towel and replace a clean trash bag. 
  4. For dirtier dried on particles on trash can

a. Use blue sponge, disinfectant cleaner and shine with a green microfiber towel.
               b. If very dirty with liquids on the bottom
                      i. Take it to the laundry room sink to clean with water
                      ii. Dry the container inside and out before placing it back where it was housed.
5. Take trash to the garage or outside where the client’s large container is located.

Look for trash, empty, replace trash liner and place trash rugs and mats safely outside of kitchen area.

 Put garbage in client’s central garbage can.  Do not bring back to office.

Sink

  1. If the grates for the stove top do not need to be soaked in the sink then spray sink drain with Envirox Red and let it sit while cleaning the remainder of the kitchen
  2. Clean sink last.  It must be completely empty for best disinfecting results

Long dusting

Dust ceiling/wall area/ corners of each wall, tops of cabinets, ledges, ceiling fans, lights, top of window/door ledges and vents.

LIGHT FIXTURES

If light fixtures can be reached with a feather duster use a feather in your second trip around the kitchen to clean each light fixture

Dust light strings, lights and air vents

Be sure to dust where fixture meets ceiling, the rope/pole and the lamp fixture f

BASEBOARDS, LIP OF THE BOTTOM CABINET AND CABINET KICKBOARDS

Dust under each cabinet kickboard

Dust all baseboards

PREPARE APRON

1. In your apron you need to place:
        a. Small tile brush and scraper in tool pocket
        b. Two blue glass cleaning cloths (one damp, one dry) in a large pocket
2. Preparing cleaning cloths
       a. Prepare one blue glass cleaning cloth by wetting with water in sink, wring out water until barely damp, fold into quarters, roll and place in a separate apron pocket with dry cloth also rolled next to it in pocket
       b. Never let a glass cleaning cloth touch another cloth while in bags or apron pockets. Grease from other cleaning products will ruin the glass towels leaving streaks on glass
       c. Damp blue sponge, damp magic eraser and whisk broom in another pocket
       d. Appropriate number of green microfiber towels in another apron pocket
                i. Appropriate number of cloths is dependent upon the size and cleanliness of kitchen
3. Place spray bottle of disinfectant cleaner in apron loop
      a. Be sure to close the sprayer bottle top tightly

Put Feather duster in one back pocket or behind apron belt and whisk broom in the other back pocket or in an apron pocket

Be sure to close sprayer top tightly to avoid major spills

Counter tops

When counter tops are relatively clean spray disinfectant cleaner directly on the counter top and rub clean and dry with a green microfiber towel. If dirty and greasy spray counter tops with added Envirox Red disinfectant cleaner and scrub with blue sponge then use a dry green microfiber towel to dry to a shine with more disinfectant cleaner when necessary.   

Spray disinfectant cleaner directly on counter top

a. Work from the backsplash down to the counter lip all the way to front of the counter.

Do not forget window sills-Work top to bottom back to front.

b. Wipe the light switches and outlet plugs with disinfectant cleaner and a green microfiber towel when you get to them.

Light switches and electrical plugs must be wet wiped with disinfectant cleaner

c. Move items to clean under and behind and then return the item back to the place you found the item.
i. To move items on the counter, move straight forward (pick up) far enough to wipe the counter behind them.

Move item forward, clean it, clean counter top behind it and move it back to the original location

d. Every item that is moved needs to be completely wiped and clean      

i. Toaster – Throw the crumbs in the trash or sink and rub clean the outside of toaster with disinfectant cleaner and a green microfiber towel or scrubby side of yellow sponge if dirty

All crumb trays and outside of toasters must be cleaned

ii. Coffee Maker – Take the coffee pot off the heating element and wash the heating element using the scrubby side of blue sponge.
          1. Use disinfectant cleaner and green microfiber towel to clean the inside area here the coffee pot sits, being sure to rub the inside top as well as the entire outside
          2. If coffee has been made and grounds remain through grounds in used garbage bag
          3. Rinse coffee pot if there is no coffee in it. If there is coffee in it, wipe outside of coffee pot and return to turned off heating element.

Take pot out and clean total outside of coffee maker

Use small tile brush in apron to clean difficult to reach areas on designer coffee makers

iii. Knife Set – Wipe the surface of the wood block with disinfectant cleaner and a green microfiber towel.  Use your whisk broom to brush off the handles and between the knives

Use whisk broom to clean crumbs and dust out between knives

iv. Spice Rack –Use feather duster, whisk broom or green microfiber towel to clean off surface dirt on spice bottles and racks.          

v. Paper piles – Pick up the paper pile and straighten it to look organized and wipe below with disinfectant cleaner and a green microfiber towel. Dry the area thoroughly before placing the pile back in place.        

vi. Canister Set – Pick up each canister, move forward and wipe the sides, top and bottom with disinfectant cleaner and a green microfiber towel, then wipe remainder of counter top

Wipe top, sides and bottom of each canister

vii. Fruit Bowls – Remove all the fruit from the bowl.  Wipe the bowl with disinfectant cleaner and a green microfiber towel and then place all the fruit back into the bowl

viii. Stand-up Mixers, Blenders, Juicers, Etc. – Wipe all sides, tops and outside of bowl with disinfectant cleaner and a green microfiber towel .  Carefully slide forward and clean below

Move any food away from area being cleaned, clean and put back

Pot and Pan Rack – Use the feather duster or microfiber towel and dust off rack and pans.  May need step stool to reach properly

DOORS 

1. Open pantry door(s) so vacuum and mop person remember to clean.

2. Wipe and shine inside and outside of patio door with glass cleaner towel.

3. Painted or wooden doors

     a. Dust facings and panels with feather duster, wet wipe when extra task

     b. Wet wipe spots clean with damp orange microfiber towel

     c. Always use disinfectant cleaner on and around handles

4. Glass doors

     a. Use a feather duster to dust all the panels, wet wipe when an extra

     b. Use a blue glass cleaning  towel to spot clean smudges

Always use disinfectant cleaner on and around handles

Use feather or static duster to dust all surfaces of the door.
Spot clean with damp green microfiber towel where needed, or full door, if extra task.
Wipe door handles and around handles with disinfectant cleaner and green microfiber towel.
Use black toothbrush to get corners.

WINDOWS AND BLINDS

1. Blinds above kitchen sinks normally need to be wet wiped with a green microfiber towel and disinfectant cleaner.

  1. Wet blinds in the same direction as the blind.  Hold blind with one hand so they do not make noise and you can press harder. 
  2. Make sure to turn blinds to the opposite direction and dust the back of the blinds.

2. Window above kitchen sinks normally need to be cleaned with a damp glass cleaner towel. 

3. It might be necessary to use the step ladder to reach the window.

4. Gently lift blinds and dust window frame and sill.

5. Leave blinds exactly as you found them.

Almost all windows and blinds above a kitchen sink need to be damp wiped on a regular repeat basis

Clean blinds in one direction

Turn blinds in the other direction and clean

Appliances

Toaster Oven 

1. Remove the tray and clean the crumbs into the trash or the sink.

a. Wipe the tray and place back.

2. Clean the outside of the toaster oven  

Remove bottom tray and dump crumbs

Microwave

  1. Remove the plate and set it next to the microwave on the not yet cleaned counter top.  If there is a lot of food build up put it in the sink with hot soapy water to let it soak while cleaning the remainder of the microwave. – TIP: Be careful the plates are slippery when wet and break very easily and are very expensive
  2. If the inside is extremely dirty with dried on food, wet your sponge thoroughly and place it in the microwave or place a cup of water inside the microwave-Turn it on for 2 minutes-wait 30 seconds for it to cool and wipe away the surface grime with a green microfiber towel.  If necessary, also use a hot soapy blue sponge on the inside and outside or scrub the inside with the scrubbing side of a yellow sponge.  This includes the top and doors.

Half fill a plastic glass or soak a blue sponge

PLACE GLASS OR SPONGE IN CENTER OF MICROWAVE

Set on high for 2-3 minutes-CAUTION-Glass/sponge will be very hot, be careful when removing

3. If the inside is not extremely dirty spray with disinfectant cleaner and wipe clean and dry with a green microfiber towel. 

4. Clean below and the bottom of the microwave to remove any food splatter.

5. Wipe clean and dry the microwave plate and put it back in the appropriate position in the microwave.

STOVE TOP

1. Exhaust fan

a. Spray Envirox Red on green microfiber towel to clean the top of exhaust fan hood and rub dry with a green microfiber towel.

b. If very greasy spray with degreaser and scrub with the scrubbing side of the blue sponge and dry with a green microfiber towel. Then spray with Envirox Red disinfectant cleaner and dry to a shine with a new green microfiber towel.

2. Clean back splash of stove

a. Spray with Envirox Red Disinfectant cleaner

b. Rub the wall tile or backsplash to a shine with a green microfiber towel.

c. If there is a large amount of grease spray with Zep degreaser and scrub with the scrubbing side of the blue sponge and dry with a green microfiber towel. Then spray with Envirox Red disinfectant cleaner and dry to a shine with a new green microfiber towel.

Be sure to clean backsplash of stove

3. Stove top with grates    

a. Check the condition of the grates on the stove top.        

i. If they are very soiled fill the sink with HOT water and dish soap. Let the stove grates soak in the sink.        

ii.  If not dirty spray grates with disinfectant cleaner and move the grates to one side of the stove top or place all grates on a towel on the counter top next to the stove.

b. Remove all knobs and burners from the stove

c. Spray stove top -Do not get electronic starter wet-Hold spray bottle flat, do not spray an angle

d. Clean from the back to the front of the stove top

e. Clean stove top with grates      

i. Spray with disinfectant cleaner    

 ii. Rub to a shine with a green microfiber towel.

Move grates to right of stove top and clean back to front

f. Dirty stove top with grates
    i. Spray with degreaser
    ii. Scrub with the scrubbing side of yellow sponge
   iii. Use Victoria Bay Cream Cleanser on difficult spots
    iv. If a white ceramic stove top scrub with a magic eraser
    v. Finish by spraying Spic and Span Disinfectant Cleaner and drying to a shine with a dry green microfiber towel
g. Wipe or rub knobs and burners with disinfectant cleaner and green towel and place them back exactly where they were
h. Scrub grates with the scrubby side of yellow sponge and dry to a shine with a green microfiber towel.
    i. Clean items on the stove top and place the items back where you found them

4. Flat cook top
   a. Clean stove top
      i. Spray with disinfectant cleaner
      ii. Wipe dry with green microfiber towel
      iii. Shine with glass cleaner towel
   b. Dirty stove top
      i. Put Victoria Bay Cream Cleanser on difficult spots and scrub with scrubby side of yellow sponge
      ii. Apply Weiman Glass Cook Top Heavy Duty Cleaner and rub to a shine with a green microfiber cloth

Use creamy cleanser and non-abrasive scrubbing pad on dirty stove top

Apply glass cook top cleaner, scrub off with green microfiber towel and rub to a shine. 

Oven and Oven Door

1. Do not clean inside of oven unless client is paying extra for it

2. Oven door

    a. Always clean with the grain of the stainless steel

    b. Spray full door with disinfectant cleaner to remove any grease from door and glass

    c. Use dry green microfiber towel to clean and dry

3. Oven door glass and windows

    a. Use the glass cleaner towel on any glass and windows to insure streak free glass

4. Shine stainless steel with stainless steel cleaner when finished with cleaning kitchen before floors

Spray full door with disinfectant cleaner

Use glass cleaner cloth on any glass on oven door

Dishwasher

1. Door-Stainless

     a. Always clean with the grain of the stainless steel

     b. Spray full door with disinfectant cleaner to remove any grease from door

     c. Open door and clean inside rim of the dishwasher and door

     d. Use dry green microfiber towel to clean and dry

     e. Shine with stainless steel cleaner when finished with cleaning kitchen before floors

2. Black, White, Almond Door

    a. Spray full door with disinfectant cleaner to remove any grease from door 
    b. Open door and clean inside rim of the dishwasher and door

     c. Use magic eraser on handles or areas that are very dirty

    d. Use dry green microfiber towel to clean and dry

3. Use your whisk broom to brush the air vents on the dishwasher

Always clean in same direction as grain

Refrigerator

1. Door

   a. Less than 6 items-take items off before cleaning the door and put them back exactly where you found them when door is cleaned

   b. More than 6 items-clean around the items as best you can-do not take down

2. Clean water and ice cube dispenser tray with disinfectant cleaner and small tile brush in apron pocket. Thn dry with green microfiber towel.

3. Stainless steel door

   a. Always clean with the grain of the stainless steel

   b. Spray full door with disinfectant cleaner to remove any grease from door

   c. Open door and clean the side of door

   d. If very dirty use degreaser

   e. Use dry green microfiber towel to clean and dry

   f. Shine with stainless steel cleaner when finished with cleaning kitchen before floors

4. Black, White, Almond Door

   a. Spray full door with disinfectant cleaner to remove any grease from door

   b. Open door and clean side of the door

   c. Use degreaser and scrubby side of yellow sponge or magic eraser on handles or areas that are very dirty

   d. Use dry green microfiber towel to clean and dry

5. Use your whisk broom to brush the air vents on the bottom of the refrigerator

6. If client wants inside of refrigerator cleaned and it is not in the work order call the office.

Be sure to clean top and inside of handle

Cupboards/Cabinets

1. Spot clean cabinets with damp green microfiber cloth unless it is an additional task on work order

   a. Spot clean top cabinets above counter tops you are about to clean before cleaning counter top

   b. Spot clean bottom cabinets below counter top you just cleaned

2. Only clean top and bottom cabinets as far as you can reach before taking a step

3. Use disinfectant cleaner on all touch point door handles

Spot clean door and disinfect door handles

Sink

1. Place Victoria Bay cream cleanser in sink bottoms, around drain and a bit on the sides

   a. Use the tile brush in your apron to clean the grout line on hanging sinks or the line where the sink meets the counter on inset sinks

   b. Scrub around faucets, faucet connections and sprayers with tile brush

   c. Scrub the drain area with tile brush

Use tile brush in apron to clean all faucet connections, sink grout lines and drain rings

d. Scrub the sink area with scrubby side of yellow sponge

Scrub sink in circular motion

e. Rinse well with water

f. Spray a small amount of Spic and Span Disinfectant Cleaner on sink and faucets

g. Wipe the faucets and sprayers with a dry green microfiber towel  until they shine

Wipe fixtures to a shine with dry cloth

h. Wipe sink completely dry with same green microfiber towel

2. Wipe off all items with a damp green microfiber towel and place the items with the label facing out in the exact position you found them

Stainless Steel Appliances

1. Before you clean the floors use stainless steel cleaner on any stainless steel appliances.

a. Spray the cleaner directly on the cleaning towel, never directly on the appliance

     i. Be careful not to get it on floor as it is very slippery

b. Wipe to a shine in the same direction as the grain.

Be sure to wipe stainless steel cleaner in same direction as grain-opposite direction will cause damage to the door

REPLACEMENT OF RUGS AND MATS

1. After floors are dry

     a. Replace all mats and rugs to their original location.

      b. Check counter tops from different angles to insure they are shiny, no wateror smudge spots

      c. Check that everything in kitchen is back where you found it
